Kaga no I Brewery is a historic brewery founded in 1650, located in Itoigawa City, Niigata Prefecture. This sake is made from the highest quality sake rice, "Yamada Nishiki", polished to a 'at 50% of its weight. It has an elegant fragrance similar to that of Daiginjo, with a richness in umami that develops smoothly. The fermentation water is hard water, similar to the "Miyamizu" of the region of Nada, which contributes the characteristics of "umami" and "depth". This sake is an unfiltered "Muroka Namagenshu", offering a natural and pure taste.
